This should be where I wax poetic about the delights of this wine from Burgundy in a post titled “Bourgogne with Beef Bourguignon from an Instant Pot” for this month’s French Winophiles excursion into Burgundy Part 2 with LM Archer following last month’s amazing trip where we paired this Chablis with seafood and beurre blanc sauce:
While we’ve been participating regularly with Winophiles for a few months now, we just couldn’t find the time to make it happen this month! I bought the wine and we had the menu but it’s the last week of school for both Sue (teaching) and my son (8th grade promotion) and we just had WAY too much going on to pull it off by Saturday’s deadline of 8am PST!
However, these fine folks DID! So please go see their posts and know that one of these days SOON Sue and I are going to do this!

Thanks for understanding! I am loving reading all of your pairings! Part of me wishes we’d just gone for a simple menu — like Copper River Salmon which is at peak season! But we have our hearts set on this pairing… and had planned it for months!!
