Organic Côtes du Rhône Rosé with Salmon Cakes, Squash Soup, Salad

Rosé Day –the second Saturday of June each year–officially marks the start of Rosé season for many, and what better way than with organic Rosé from the Côtes du Rhône region in southern France? So many foods go well with Rosé— think smoked meats, cheeses, seafood, quiche— that it can be hard to decide what to choose! Sue wanted to do something different and suggested salmon cakes — a first for us here on Wine Predator. Since we had a winter squash that needed to be used, and a perfectly ripe organic pear, we knew the direction we would go to round out the meal.

They have been certified organic since 2020. Their philosophy is

  • Respect for fauna and flora.
  • Vineyard managed using organic farming methods.
  • Living soil with permanent natural grasses alternated every other row.  
  • Vineyard managed through precise cultivation.
  • No irrigation.
  • Manual grape selection in May-June.  
  • Small yields.
  • Manual harvest.
  • Traditional vinification following organic rules.

Appearance:  Salmon, copper, platinum rim, very pretty in the glass.

Aroma: Roses and fruit, cotton candy, green herbs, strawberry, cherry, carnation, honeydew, cucumber.

Palate: Strawberry, cherry, minerals, sage, mint, bubble gum, cantaloupe.

Pairing: The squash soup brings out lovely sweetness in the wine and the wine brings out the creaminess in the soup.  Very nice with the fresh salmon cakes, then when the aioli is included it just kicks the pairing to another level. Fantastic with the salad loving the perfectly ripe pears and everything else in the salad; it all goes so well together.

In 1826, the when Alain Jaume family settled north of Châteauneuf-du-Pape and planted a vineyard.

“A great wine is made with beautiful grapes, by allowing the forces of the Earth to express themselves,” they say.

As organic farmers, their cultivate vineyards Domaines Grand Veneur, Clos de Sixte and Chateau Mazane according to the following organic farming protocols, according to their website:

  • Soils are maintained exclusively by shallow ploughing and supported by plant composts.
  • Yields are low or controlled.
  • To promote aeration of the bunches, we thin out the leaves manually around the edges of the grapes, only on the side facing the rising sun.
  • Hand-picked grapes are sorted bunch by bunch.
  • After careful ageing, the wines are only slightly clarified to respect the character of each terroir. A slight natural deposit may form at the bottom of the bottle, a sign of their richness and vitality.

Appearance:  Pale copper, rose gold, platinum rim, pale and sparkly as it catches the light in the glass.

Aroma: Mountain strawberry, cinnamon, carnation, roses, earth.

Palate: Light and refreshing, rose water, wild strawberry, mint, nice perfume finish.

Pairing: We thought this would be nice with a watermelon mint salad. With food on the palate, this wine becomes so much richer and heartier than it was before. The salad was a perfect combination with the wine as the wine loves the herbs and fresh garlic in the salmon cake dish. Unfortunately the wine was not a great match with the soup; both of us just wanted to go back to the salmon cakes and the salad.
